This is one of my favorite Small Fillet and boning knifes. It is an all around, excellent knife and I can not say enough about it. It has a stainless steel blade and a composite handle. I have owned one of these for 6-7 years now and they are awesome knives. I actually purchased about 8 more after I got the first one and have two that I allow my bride to use but the ones I use….it’s hands off for her! I keep one here at the office, gave 4 away as gifts and have another in the food box in our gear trailer at our farm in Illinois. They handle all duties!
As long as you keep it relatively sharp it is no problem to bring the edge back to “shave your arm sharp.” One of my Captain buddies, Capt. Rick turned me on to a sharpening steel that Gerber used to make. Stroke this knife on the edge of that steel 6-8 times on both sides and this thing will take your arm off! You probably don’t really want it overly sharp for filleting a fish as is has a tendency to cut through smaller bones without you feeling them when it is that sharp.
The blade is stiff enough for boning a deer ham but works equally well as a fillet knife for smaller fish. You will probably need something a little longer for filleting and skinning larger fish. If you can find one somewhere, an old USA made “Schrade 1470T” is the ticket. It has a longer blade with more flex.
